Hit up your local farmers market if you can for some amazing eats below!
(Total inspiration from one of my favorite ladies in Connecticut)
Quinoa Salad:
• 1 ½ cup of cooked quinoa
• 5 pickling cukes (honestly a regular one is fine)
• 3 little tomatoes
• 1 small red onion
• ¼ red wine vinegar
• 1 pinch parsley and mint (don’t crazy with the mint)
• salt/ pepper, feta, and olive oil to your liking
Presentation- cut bottom of endive and use as a boat to serve the quinoa salad topped with avocado
Green Bean Sister Summer Salad
• 1 pound of cooked green beans cut in half
• 1 can chickpeas (if you get from a can thoroughly wash)
• 5-6 olives cut into small pieces (any kind)
• Salt/ pepper, feta, and olive oil to your liking
• 3-4 crushed whole walnuts
Salmon
(Wild caught if available)
• Filet of salmon
• Layer your fav type of mustard on top
• Sprinkle of sea salt/pepper
• Sprinkle crushed almond
• 400 degrees for 25-30 mins
